In a large brew kettle, heat 6 cups of water to 165°F (73°C). Add 5 cups of Pilsner malt to the water and stir well. Maintain the temperature at around 150-155°F (65-68°C) for 60 minutes to allow the sugars to extract from the malt.

Mashing

After mashing, remove the grain bag and bring the liquid (wort) to a boil. Once boiling, add 1 tablespoon of Cascade hops and boil for 60 minutes. This will add bitterness and aroma to the beer.

Boiling

After boiling, cool the wort quickly using an immersion chiller or an ice bath until it reaches about 70°F (21°C).

Cooling

Transfer the cooled wort into a sanitized fermentation vessel. Add the yeast and seal the vessel with an airlock. Allow the beer to ferment at a steady temperature of around 50-55°F (10-13°C) for about 2 weeks.

Fermentation

After fermentation is complete, dissolve 0.5 cups of corn sugar in 2 cups of water and bring to a boil. Cool and add to the beer before bottling. Transfer the beer into sanitized bottles, cap them, and let them carbonate at room temperature for another 2 weeks.

Bottling

Once carbonation is complete, chill the bottles in the refrigerator. Your American Light lager is ready to enjoy! Remember that 22% of profits go to fighting food insecurity in Missouri.
