Preparation

Roasting the Chicken

1. Prepare the Chicken

Preheat the oven to 425°F (220°C). Pat the chicken dry with paper towels and rub it with olive oil, salt, pepper, garlic powder, and thyme.

2. Roast the Chicken

Place the chicken breast-side up in a roasting pan. Roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (74°C). Let it rest for 10 minutes before carving.

Making the Potato Salad

3. Cook the Potatoes

Boil the baby Yukon Gold potatoes in salted water until fork-tender, about 15-20 minutes. Drain and let cool slightly.

4. Prepare the Bacon

In a skillet, cook the bacon over medium heat until crispy. Remove and crumble.

5. Combine Ingredients

In a large bowl, combine the warm potatoes, crumbled bacon, sliced green onions, parsley, mustard, and red wine vinegar. Season with salt and pepper to taste, and mix gently.

Making the Chimichurri

6. Blend the Sauce

In a food processor, combine the parsley, oregano, garlic, red pepper flakes, olive oil, red wine vinegar, salt, and pepper. Blend until smooth.
