Method
Roasted Vegetable Medley
Preheat the oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper or lightly oil it.
Place the bell peppers, zucchini, red onion and baby carrots in a large bowl so the pieces are in a single layer as much as possible.
Spread the vegetables in a single layer on the prepared baking sheet, leaving a little space between pieces so they roast instead of steam.
Roast for 20–25 minutes, turning once halfway through, until vegetables are tender and edges are caramelized. Remove from oven and keep warm.
Blanched Herb-Dressed Green Beans
Bring a large pot of water to a rolling boil and add 1 tbs kosher salt.
Add the trimmed green beans and cook for 2–3 minutes until they are bright green and just tender-crisp.
While beans cook, prepare an ice bath using 1 l of ice water in a large bowl.
Using a slotted spoon, transfer the beans to the ice bath to stop cooking and preserve color. Chill for 2 minutes, then drain well and pat dry with kitchen towel.
In a medium bowl whisk together 1 tbs extra-virgin olive oil, 1 tbs fresh lemon juice, 1 tsp minced shallot, 2 tbs chopped parsley, 1 tsp lemon zest, and salt and pepper to taste.
Add the drained green beans to the dressing and toss gently to coat. Set aside at room temperature or keep lightly chilled until plating.
Vegetable Purée (Carrot & Cauliflower)
Bring to a simmer over medium heat, cover, and cook until both carrots and cauliflower are very tender, about 12–15 minutes.
Drain the vegetables, reserving 2–3 tbs of the cooking liquid. Transfer the vegetables to a blender or use an immersion blender in a pot.
Add 2 tbs unsalted butter, 30 ml heavy cream (optional), 1 tsp salt and 1 tsp white pepper. Purée until completely smooth, adding reserved cooking liquid a tablespoon at a time if needed to reach a silky consistency.
Taste and adjust seasoning. Keep warm over very low heat or rewarm gently before plating.
Finishing & Plating
For each serving (recipe yields 4), spoon a generous smear of the carrot–cauliflower purée onto the plate as a base (about 3–4 tbs purée per plate).
Arrange a portion of roasted vegetable medley (about 1/4 of the roasted vegetables) beside the purée, showing some caramelized edges for contrast.
Place a small mound (about 100 g) of the dressed green beans next to the roasted vegetables.
Drizzle 1 tsp extra-virgin olive oil lightly over the vegetables, sprinkle toasted sliced almonds (about 1/2 tbs per plate) over the green beans if using, and finish with microgreens or fresh herbs and a light pinch of flaky salt.
Serve warm so the roasted vegetables and purée are hot while the green beans remain bright and slightly chilled. Enjoy.
