Method
Garden Orange Sorbet
Make simple syrup
Combine 2 tbs sugar and 2 tbs water in a small saucepan over medium heat. Stir until sugar dissolves and mixture barely simmers, about 2 minutes. Remove from heat and let cool to room temperature.
Prepare orange base
In a bowl, combine 2 cups strained fresh orange juice, cooled simple syrup, 1 tbs orange zest, 1 tsp lemon juice, and a pinch of salt. Taste and adjust sweetness or acidity — it should taste slightly brighter than you want the final sorbet because freezing mutes flavor.
Infuse basil
Add thinly sliced basil leaves to the orange mixture and let steep for 20–30 minutes at room temperature to impart a subtle herbaceous note. For a cleaner finished texture, you can bruise the basil slightly before adding.
Strain and chill
Strain the mixture through a fine-mesh sieve to remove basil and any pulp. Chill the strained mixture thoroughly in the refrigerator until cold, at least 1 hour (or overnight).
Churn
Pour the chilled orange mixture into an ice cream maker and churn according to manufacturer's instructions until it reaches soft-sorbets consistency (usually 20–30 minutes).
Harden
Transfer sorbet into a shallow, airtight container, smooth the top, press plastic wrap directly onto the surface to prevent ice crystals, and freeze until firm, about 2–4 hours.
Serve
Let sorbet sit at room temperature 3–5 minutes to soften slightly before scooping. Garnish with a small basil chiffonade if desired.
Lemon Sorbet
Combine with lemon
Stir in 1 cup strained lemon juice, 1 tsp lemon zest, 1 tbs corn syrup or light honey (optional), and a pinch of salt into the cooled syrup. Taste and adjust — it should be slightly brighter than desired finished flavor.
Chill
Refrigerate the lemon mixture until thoroughly cold, at least 1 hour.
Churn
Churn in an ice cream maker according to manufacturer's instructions until it reaches soft-sorbet texture (about 20–30 minutes).
Freeze
Transfer to a shallow, airtight container, press plastic wrap onto the surface, and freeze until firm, about 2–4 hours.
Mixed Berry Sorbet
Cook briefly
Warm the berry mixture over medium heat just until the sugar dissolves and the fruit releases juices, about 3–4 minutes. Do not overcook; you want softened fruit, not jam.
Cool and flavor
Remove from heat and stir in 2 tsp lemon juice, 1 tsp orange liqueur (or 1 tsp water if avoiding alcohol), and a pinch of salt. Let cool to room temperature, then chill thoroughly in the refrigerator until cold, about 1 hour.
Blend and strain
Once chilled, purée the cooled berry mixture in a blender or food processor until smooth. For an ultra-silky sorbet, press the purée through a fine-mesh sieve to remove seeds and remaining solids.
Churn
Churn the strained purée in an ice cream maker according to manufacturer's directions until it reaches soft-sorbet consistency (approximately 20–30 minutes).
Freeze
Transfer sorbet to a shallow, airtight container, smooth the top, press plastic wrap onto the surface to prevent ice crystals, and freeze until firm, about 2–4 hours.
Serve
Let the mixed berry sorbet sit 3–5 minutes to soften slightly before scooping. Garnish with a few whole berries or mint if desired.
