Method
Beef Sliders (Classic with Cheddar & Caramelized Onions)
Prep Pickled Red Onions (make ahead)
Thinly slice 1 red onion and place in a bowl. Whisk together 1 tablespoon red wine vinegar and 1 teaspoon sugar until dissolved. Pour over onions, toss, and let sit at least 30 minutes (refrigerate if making more than 2 hours ahead).
Caramelize Onions
Heat 1 tablespoon olive oil in a wide skillet over medium-low heat. Add 2 thinly sliced yellow onions and a pinch of salt. Cook, stirring occasionally, for 25–30 minutes until soft and golden. Add 1 teaspoon brown sugar in the last 5 minutes to encourage caramelization. Remove from heat and keep warm.
Form & Cook Beef Patties
Divide 3 lbs ground beef into 12 equal portions (~4 oz each). Gently form into flat patties slightly wider than buns, do not overwork. Season both sides with 2 teaspoons fine sea salt, 1 teaspoon black pepper, and brush each side lightly with 1 tablespoon Worcestershire sauce distributed across patties. Heat a heavy skillet or griddle over medium-high heat with a light film of oil. Cook patties 2–3 minutes per side for medium (adjust time for desired doneness). In the final 30 seconds, top each patty with a small cheddar slice to melt; cover skillet briefly if needed.
Toast Buns & Assemble
Split 12 brioche buns and brush cut sides with melted butter (about 4 tablespoons). Toast in a 350°F oven or on a griddle until golden, 3–5 minutes. Spread mustard and ketchup on bases as desired. Place patty on bottom bun, add caramelized onions, pickled red onion slices, and pickle slices. Cap with top bun and secure with a mini pick.
BBQ Pulled Pork Sliders (with Coleslaw)
Season & Roast Pork (can be done 1 day ahead)
Rub 4 lbs pork shoulder with 2 tablespoons kosher salt, 1 tablespoon black pepper, 2 teaspoons smoked paprika, 1 teaspoon garlic powder and 1 teaspoon onion powder. Place in a roasting pan and add 1 cup apple cider vinegar to the pan to keep the meat moist. Cover and roast at 300°F for 4–5 hours until the meat is fork-tender and pulls apart easily. Alternatively, cook on low in a slow cooker for 8 hours.
Shred & Sauce
When pork is tender, let rest 10 minutes, then shred with forks or meat claws, discarding excess fat. Stir in 2 cups barbecue sauce and adjust salt/acid to taste with a splash more apple cider vinegar if needed. Keep warm for service (hold in hotel pans over low heat).
Assemble Pulled Pork Sliders
Split 12 slider buns and place shredded pork on bottom bun (about 2–3 oz per slider). Top with a spoonful of prepared coleslaw and a light drizzle of extra BBQ if desired. Cap with top bun and secure with a mini pick.
Crispy Chicken Sliders (Buttermilk & Herb)
Marinate Chicken
Cut 2 lbs chicken thighs into 12 slider-sized pieces (roughly 3–4 oz each). Combine 2 cups buttermilk and 1 teaspoon hot sauce (optional). Submerge chicken pieces and refrigerate at least 2 hours or up to overnight to tenderize and flavor.
Dredge & Fry
In a shallow bowl combine 2 cups all-purpose flour, 1/2 cup cornstarch, 2 teaspoons garlic powder, 1 teaspoon onion powder, 1 teaspoon smoked paprika, 1 teaspoon dried thyme, 2 teaspoons kosher salt and 1 teaspoon black pepper. Remove chicken from marinade, letting excess drip off, and dredge thoroughly in flour mixture, pressing to adhere. Heat neutral oil in a deep fryer or large pot to 350°F (175°C). Fry chicken pieces in batches until golden and internal temperature reaches 165°F, 5–7 minutes depending on size. Drain on a wire rack over a sheet pan to maintain crispness.
Make Lemon Herb Mayo
Whisk together 1 cup mayonnaise and 1 tablespoon lemon juice; season with a pinch of salt and chopped chives if using. Keep chilled until service.
French Fries & Seasonings
Prep Fries (can be done ahead then fried to order)
Peel (optional) and cut 6 large russet potatoes into even fries. Place cut fries in cold water and soak at least 30 minutes (up to 4 hours) to remove starch. Drain and rinse, then pat dry thoroughly with clean towels. Toss dried fries with 2 tablespoons cornstarch until lightly dusted—this creates extra crispness.
Blanch & Fry
Heat neutral oil in a deep fryer or pot to 325°F (160°C). Working in batches, blanch fries until soft but not colored, about 3–4 minutes. Remove and let drain on paper or racks. Increase oil temperature to 375°F (190°C). Fry in batches again until golden and crisp, 2–3 minutes. Drain on a rack, immediately season with kosher or seasoned salt to taste, and sprinkle with chopped parsley if desired. Keep warm in parchment-lined hotel pans for service.
Station Setup & Service
Arrange three mini slider sections on the station with clear labels: Beef, Pulled Pork, Crispy Chicken. Place buns, condiments, extra picks and garnishes within reach. Offer fries in communal baskets or individual paper cones. Keep hot items in covered warmers or on a holding unit (above 140°F) and replenish from hot-holding pans. Provide tongs and spoons for self-service and a staff member to restock and maintain temperature during service.
