Method
Build the Pernod 'Paris'
Measure Pernod
Pour 2 tablespoons (about 30 ml) of Pernod into the chilled glass.
Add ice
Add 4–6 fresh ice cubes to the glass so the liqueur will be quickly cooled and lightly diluted.
Top with water
Slowly add 4 tablespoons (about 60 ml) of cold water to the Pernod over the back of a spoon or down the side of the glass to encourage gentle mixing and the classic louche (milky) transformation. Adjust water to taste if you prefer a milder or stronger drink.
Stir gently
Give the mixture one or two gentle stirs with a bar spoon to fully integrate water and encourage the louche without over-diluting.
