Makrut Lime Syrup
Combine and infuse
In a small saucepan combine 1 cup granulated sugar and 1 cup water. Stir over medium heat until the sugar fully dissolves and the liquid just comes to a simmer.
Once simmering, add 8 fresh makrut (kaffir) lime leaves (roughly torn to release oils) and 1 tablespoon of grated makrut lime zest. Reduce heat to low and gently simmer for 5 minutes to extract aromatic oils. Do not boil vigorously — you want gentle infusion.
Remove the syrup from heat. Let the leaves steep in the syrup as it cools for 30 minutes for a stronger flavor. Taste after 30 minutes: if desired, steep another 15–30 minutes (the syrup will intensify).
Strain the cooled syrup through a fine mesh sieve or cheesecloth into a clean jar, pressing gently on the leaves to extract liquid but not bitterness. Discard solids. Refrigerate syrup until ready to use (keeps up to 2 weeks). Yield: ~1 1/4 cups infused syrup.
Makrut Lime Juice Concentrate
If using fresh makrut limes: roll each lime on the countertop to loosen juices, then cut and juice until you have about 1/2 cup (generally 3–6 limes depending on size/juiciness). Strain the juice to remove pulp and seeds.
If makrut limes are unavailable, use 1 cup fresh regular lime juice. Combine 1 cup lime juice with 1/4 cup of the prepared makrut lime syrup to add aromatic lift and sweetness; this creates the makrut lime juice concentrate. If you used fresh makrut lime juice, you can still stir in 1/4 cup of the makrut syrup to balance acidity.
Taste the concentrate and adjust: it should be bright, slightly sweeter than straight lime juice, and fragrant with makrut leaf notes. Chill until assembling drinks.
Assemble Mommenpop 'Makrut' Limepop
Prepare glasses: divide ice evenly among 4 highball or Collins glasses (about 1 cup ice per glass). Add a thin slice of lime and two makrut lime leaves to each glass for aroma.
Combine base: in a pitcher, pour 6 fl oz vodka (optional; omit for non-alcoholic version), 1/2 cup makrut lime syrup, and 1/2 cup makrut lime juice concentrate. Stir well to combine.
Top up: pour the mixture evenly over the prepared glasses (about 3 fl oz per glass of the concentrate mixture), then top each glass with roughly 4 fl oz cold club soda or sparkling water. If using prosecco for extra sparkle, substitute 2 fl oz of the soda with 2 fl oz prosecco per glass.
Garnish and finish: lightly clap a makrut lime leaf between your palms to release oils and place it on top of each drink. Optionally rub the rim with a lime slice for extra aroma. Serve immediately with a long spoon or straw.
Non-alcoholic variation: omit vodka and increase club soda by 6 fl oz (so total soda 22 fl oz) or add 4 fl oz additional simple syrup if you want it sweeter. Adjust to taste.
