Method

Prepare Crab Cake Mix

Check and pick crab

Inspect the lump crab meat and remove any cartilage or shells. Gently break the lumps into bite-size pieces but avoid shredding — you want visible lumps in the final cakes.

In a medium mixing bowl combine mayonnaise, Dijon mustard, Worcestershire sauce, lemon juice, beaten egg, chopped parsley, sliced green onions, Old Bay seasoning, salt, and black pepper. Whisk briefly until blended.

Add the crab meat and 3 tablespoons panko breadcrumbs to the bowl. Gently fold with a spatula to combine. The mixture should hold together when pressed but remain loose; if too wet add up to 1 tablespoon more panko.

Cover the bowl and refrigerate for 20 minutes to allow the binder to set. Chilling makes shaping easier and reduces breakage while frying.

Shape and Coat

Set up a dredging station: one shallow bowl with flour, one with the beaten egg, and one with 1 cup panko breadcrumbs. Season the flour lightly with a pinch of salt and pepper.

Portion the crab mixture into 18 mini cakes (about 1.5 tablespoons each) or 12 slightly larger ones depending on desired size. Use a tablespoon or small ice cream scoop and gently form into compact patties about 1/2 inch thick. Do not over-compress.

Dredge each patty first in flour, shaking off excess, then dip into the beaten egg, allowing excess to drip off, and finally coat evenly with panko breadcrumbs. Place coated cakes on a tray and refrigerate for 10 minutes to help the coating adhere.

Fry Until Crispy

Pour approximately 1/4 to 1/2 cup oil into a large skillet — you want the oil about 1/4 inch deep. Heat over medium heat until shimmering and a small pinch of breadcrumbs sizzles and browns in about 30–45 seconds (around 350°F / 175°C).

Working in batches (do not overcrowd), add 6–8 mini cakes to the skillet and fry for 2–3 minutes per side, until golden brown and crisp. Use a thin spatula to turn carefully so the cakes stay intact.

Transfer cooked cakes to a paper towel-lined plate to drain. Keep warm in a low oven (200°F / 95°C) while frying remaining batches. Add more oil if the pan looks dry between batches.

Make Optional Lemon Aioli

While frying, whisk together 1 tablespoon mayonnaise, lemon zest, lemon juice, minced garlic, 1/4 teaspoon salt, and 1/4 teaspoon black pepper in a small bowl until smooth. Taste and adjust lemon or seasoning as needed.

Serve

Arrange mini crab cakes on a platter with lemon wedges and the lemon aioli for dipping. Garnish with extra chopped parsley or sliced scallions if desired. Serve immediately while hot and crispy.
