Combine and ferment (optional quick method)
In a sterilized jar, stir together 0.75 cup raw honey, 2 tbs sriracha (or aged chili paste), 1 tsp rice vinegar and 1 tsp minced garlic until uniform. If you want mild lacto-fermentation flavor, dissolve 2 tsp whey or a pinch (about 2 tsp) of live probiotic powder into the mix. Loosely cover with a lid or airlock and leave at room temperature (65–75°F / 18–24°C) out of direct sun for 24–72 hours to develop a tangy, slightly effervescent note. For a quicker, non-fermented version skip the starter and proceed immediately.
Finish consistency & store
After fermentation (or immediately for quick version), taste and adjust: add up to 1 tsp warm water if too thick, 1 tsp rice vinegar if you want brighter acidity, or extra chili paste to up heat. Transfer to a sealed jar and refrigerate; use within 3–4 weeks. Use 3 tbs of this fermented hot honey for the glazed carrots.

Preheat oven
Preheat the oven to 425°F (220°C). Line a rimmed baking sheet with parchment or lightly oil it.
Prepare carrots
Place 1 lb peeled and halved/cut carrots in a mixing bowl. Toss with 2 tbs extra-virgin olive oil, 1 tsp salt and 1/2 tsp black pepper until evenly coated.
Roast carrots
Arrange carrots in a single layer on the prepared baking sheet, cut side down where applicable. Roast in the preheated oven for 18–22 minutes, until edges are caramelized and carrots are tender when pierced with a fork. Shake or flip once about halfway through for even browning.
Make glaze and finish
While the carrots roast, combine 3 tbs fermented hot honey, 1 tbs unsalted butter and 1 tbs fresh lemon juice in a small saucepan set over low heat. Warm gently and whisk until butter melts and the glaze is glossy and slightly thickened, about 1–2 minutes—do not boil. Taste and adjust: add a pinch of salt or 1/2 tsp extra lemon if desired.
Glaze roasted carrots
When carrots are done, transfer them to a warm serving dish or keep on the baking sheet. Drizzle the hot honey glaze evenly over the carrots and toss gently with tongs or a spatula to coat. Return to the oven for 1–2 minutes if you want the glaze to set slightly, or serve immediately for a looser coating.
Garnish & serve
Sprinkle 1 tbs finely chopped fresh parsley over the glazed carrots (optional) and serve warm. Adjust salt/pepper to taste. Leftovers keep refrigerated up to 3 days—reheat gently to restore glaze sheen.
