Prepare cheeses

Temper cheeses

Remove all cheeses from refrigeration 30–60 minutes before serving and keep them covered at room temperature. This allows flavors and textures to open up (longer for hard cheeses; 30 minutes for soft cheeses).

Cut and present

Trim rind only if desired (do not trim natural rinds that contribute flavor). Slice the hard cheese into thin wedges or bite-sized cubes. For semi-soft cheese, make small rectangles or wedges. Leave the soft-ripened cheese whole or cut a wedge and partially uncap the top for presentation. Crumble or leave a chunk of blue cheese with a small knife for serving.

Prepare accompaniments

Fruit: Wash grapes and berries; pat dry. Core and thinly slice apples or pears immediately before serving to avoid browning (or toss slices in a light lemon-water if preparing earlier). Halve fresh figs or stone fruits and fan them slightly for the board.

Nuts: If nuts are not pre-toasted, preheat oven to 175°C (350°F). Spread nuts on a baking sheet and toast 6–8 minutes until fragrant, stirring once. Allow to cool.

Bread & crackers: Thinly slice baguette and lightly brush with olive oil; toast in a 200°C (400°F) oven 6–8 minutes until crisp. Arrange crackers in small stacks or fans so guests can access them easily.

Pickles & olives: Drain any excess liquid from cornichons and olives and place in small bowls to prevent sogginess on the board.

Assemble the cheese plate

Choose a large wooden board or platter with room for separation between items. Place the four cheeses spaced apart (think clock positions) so each cheese has its own area.

Add small bowls or ramekins for fig jam, honey, and any small pickles or olives. Place them near cheeses they complement (e.g., fig jam by blue or soft cheeses; honey near blue and hard cheeses).

Arrange fresh fruit and seasonal items in small clusters around the cheeses. Fan sliced apples/pears and halve larger fruits for easy picking. Scatter toasted nuts in small piles near complementary cheeses.

Place cured meats folded or rolled on one side if using. Add crackers and toasted baguette slices in multiple access points around the board to avoid crowding.

Garnish: Tuck fresh herb sprigs between items for color and aroma. Drizzle a small amount of honey or balsamic reduction over the rind edge of a hard cheese if desired (serve the rest on the side).

Provide tools: Include a separate knife for each cheese style (hard knife, spreading knife for soft cheese, small fork for blue cheese) so flavors do not cross-contaminate.

Final touches & serving

Label cheeses with small tent cards or notes if desired, indicating cheese name and origin to guide guests.

Serve within 1–2 hours of assembly at room temperature. Replenish accompaniments as needed. Store leftovers in the refrigerator, wrapped separately to preserve flavors.
