cook eggs

Place 12 large eggs in a single layer in a medium saucepan and cover with cold water by about 1 inch. Bring to a gentle boil over medium-high heat. Once boiling, cover the pan, remove from heat, and let sit for 10 minutes. After 10 minutes, transfer eggs to an ice bath for at least 10 minutes to stop cooking and make peeling easier.

peel and halve

Carefully crack and peel the cooled eggs. Rinse to remove shell bits. Slice each egg lengthwise and remove yolks into a medium bowl; place white halves on a tray lined with paper towels.

prepare filling

Mash the egg yolks with a fork until smooth. Add 1 cup mayonnaise, 2 tsp Dijon mustard, 1 tsp white wine vinegar, 2 tbs finely chopped chives, 1 tsp fine sea salt, and 1 tsp freshly ground black pepper. Stir until very smooth and taste; adjust seasoning or mayo for desired creaminess. If desired, reserve a small spoonful of the yolk mixture for piping texture contrast later.

Transfer yolk mixture to a piping bag fitted with a round or star tip (or use a zip-top bag with corner snipped). Fill each egg white half generously, mounding slightly to create a domed surface that will accept the crisp coating and toppings.

Arrange three shallow bowls: one with 3 tbs flour seasoned with a pinch of salt, a second with 1 large egg beaten with 3 tbs cold sparkling water (this creates a light egg wash), and a third with 1 cup panko mixed with 2 tbs fine cornmeal and 1 tsp fine sea salt and 1 tsp smoked paprika. Keep the panko mixture loosely fluffed.

Working gently to keep the filling in place, dredge each filled egg half first in flour (light dust), then dip into the egg wash—allow excess to drip off—and finally press into the panko mixture to coat. Use a spoon to help cover the bottom and sides without smashing the filling. Place coated eggs on a wire rack while you heat the oil.

shallow fry until crisp

Pour about 1 cup neutral oil into a wide skillet to reach roughly 1/8–1/4 inch depth. Heat over medium heat until oil reaches 325–340°F (use a thermometer) or a small breadcrumb sizzles on contact. Fry coated eggs in batches, 1–2 minutes per side, turning carefully with a spatula to crisp all surfaces; do not overcrowd. Transfer to a paper towel–lined tray to drain briefly. The goal is a golden, crisp exterior without overcooking the filling.

keep warm

If making multiple batches, keep finished eggs on a baking sheet in a 200°F oven for up to 20 minutes to stay warm and crisp while frying the remainder.

Topping & garnish

prepare crab

If crab meat is cold from the refrigerator, gently fluff and check for any shells. Toss the 3 oz Dungeness crab meat with 1 tsp lemon zest and a light pinch of salt so it’s bright but not wet—excess moisture will make the coating soggy.

assemble

Using a small spoon or tweezers, place a small mound (about 1/2 tsp) of flaked Dungeness crab on each warm, crispy deviled egg. Top each with a small spoonful (about 1/8–1/4 tsp) of caviar. Garnish with a few microgreens or a chive tip and a light sprinkle of smoked paprika for color.

serve

Arrange the deviled eggs on a chilled serving platter or individual spoons. Serve immediately with lemon wedges on the side for guests to squeeze lightly if desired. These are best eaten right away so the coating stays crisp.
