Selection & Preparation
Remove all cheeses from refrigeration 30–60 minutes before serving so flavors and textures relax. Unwrap cheeses and place on a clean cutting board. If cheeses are in large wedges or wheels, cut approximate serving pieces: cut the cheddar and Manchego into 1/4–1/2-inch slices or bite-size wedges; leave brie wheel whole but cut a shallow cross on top; crumble or leave blue cheese in a small wedge for easy slicing.
Arrangement
Place cheeses spaced apart on the serving board to allow room for accompaniments. Keep soft cheeses (brie, blue) on their own so their flavor doesn’t overwhelm milder cheeses. Provide a separate knife or spreader for each cheese.
Accompaniments - Fresh & Seasonal
Wash and dry grapes and figs. Halve figs if large. Core and thinly slice apples, toss apple slices in a small bowl with a light squeeze of lemon juice (optional, to prevent browning) and arrange in a fan. Place grapes in small clusters on the board for easy picking.
Accompaniments - Preserves, Nuts & Extras
Spoon fig or apricot jam into a small ramekin and place on the board. Put honey in a second small dish or in a honey dipper next to the brie (so guests can drizzle). Scatter Marcona almonds and walnut halves in small piles. Place cornichons or pickled vegetables in a small bowl to keep brine contained.
Breads & Crackers
Garnish & Finish
Tuck sprigs of rosemary or thyme between cheese groupings for aroma and visual appeal. Lightly crack black pepper over the brie or fruit if desired. Check that each cheese has a labeled card or small sign so guests know what they are tasting.
Assembly & Serving
Start by placing the largest cheese pieces on the board. Add ramekins (jam, honey) next. Arrange fruits and olives in separate clusters, leaving gaps for crackers. Scatter nuts around to fill negative space and add texture contrast. Position knives and spreaders near the corresponding cheese. Serve immediately once all components are arranged; replenish results from kitchen as items are consumed.
