Cured Meats
Arrange and fold
Remove meats from refrigeration 20–30 minutes before service so they come to near room temperature for best flavor. Fan prosciutto slices loosely and arrange in small piles across the board. Fold soppressata or salami slices into quarters or roll and place in groups of 6–8. Lay capicola slices in overlapping rows or rolled spirals. Keep each type of meat separate but allow slight overlap with other components for visual flow.
Use small bowls for any oily or loose items (eg marinated olives) and place near the meats to avoid cross-contamination of liquids onto cheeses and crackers.
Cheeses
Temper and portion
Remove all cheeses 30–45 minutes before serving to reach room temperature (this enhances flavor). Keep brie whole but cut a wedge or leave a partial cut to make it easy for guests. Pre-slice manchego into thin wedges and cheddar into 3/4" cubes. Slice the goat cheese log into medallions or crumble into a small pile. Place cheeses in separate zones on the board with space for utensils.
Provide an appropriate knife for each cheese: a spreader for brie and goat cheese, a firm knife for manchego and cheddar. Label cheeses if desired.
Accompaniments - Breads & Crackers
Accompaniments - Fresh & Pickled
Rinse grapes and leave on small clusters for easy picking. Core and thinly slice apple or pear, toss lightly with lemon juice to prevent browning, and fan on the board near the goat cheese or brie. Fill a small bowl with cornichons and olives and place on the platter so juices are contained.
Condiments
Garnish & Tools
Tuck rosemary or thyme sprigs between cheeses and meats for a fresh look and aroma. Insert toothpicks or small skewers into grouped meat roll-ups or fruit clusters for easy picking. Arrange cheese knives and serving spoons near their respective items. Leave space on the board for guests to place used items if possible.
