Cocktail

Method

Prep the Rim

1

mix rim

On a small plate, combine the togarashi spice and fine sea salt. Use about 1 teaspoon togarashi and 1/2 teaspoon salt; adjust ratio to taste. Spread into an even ring large enough for the glass rim.

2

wet rim

Run the lime wedge around the outside rim of a rocks or coupe glass (depending on style). Immediately dip the rim into the togarashi-salt mixture and twist to coat evenly. Set the glass aside to let the rim set while you mix the cocktail.

Make the Margarita

3

measure

Measure 2 oz reposado tequila, 1 oz blood orange liqueur, 1 oz fresh blood orange juice, 1 oz fresh lime juice, and 0.5 oz simple syrup (or agave) into a cocktail shaker.

4

add ice

Fill the shaker with ice (about 6 oz or enough to come 3/4 of the way up the shaker).

5

shake

Secure the shaker and shake vigorously for 12–15 seconds until the outside of the shaker is frosted and the mixture is well-chilled and slightly diluted.

6

strain

Double-strain (use a Hawthorne and fine mesh strainer if available) into the prepared togarashi-salt rimmed glass over fresh ice if serving on the rocks, or into the chilled glass without ice for a neat pour.

7

finish (optional)

If you prefer a lighter, slightly fizzy drink, top with 1 oz club soda and give the glass a gentle stir (1–2 rotations) to combine.

Garnish & Serve

8

Garnish the cocktail with a blood orange wheel or twist on the rim or floated on top. Optionally express a lime wedge over the drink before dropping it in for an extra bright aroma.

9

Serve immediately while cold. Advise sip slowly to enjoy the interplay of citrus, spice, and tequila.
