Make ginger syrup
Combine grated ginger, 1 cup water and 3 tablespoons granulated sugar in a small saucepan. Bring to a gentle simmer over medium heat, stirring until sugar dissolves. Reduce heat and simmer 5 minutes to infuse. Remove from heat, cover and steep 10 minutes, then strain through a fine mesh sieve into a heatproof bowl. Press solids to extract liquid. Cool syrup to room temperature (about 20–30 minutes). Yield ~1 cup of ginger syrup.

Prepare lemon concentrate
Juice fresh lemons until you have about 1 cup of lemon juice. Strain to remove seeds and pulp if you prefer a clear bottled drink.

Mix soda base: In a clean pitcher, combine 1 cup cooled ginger syrup and 1 cup lemon juice. Stir to combine. Taste and adjust sweetness by adding up to 1–2 tablespoons sugar or more ginger syrup if needed; remember carbonation will mute sweetness slightly.

Bottle: Divide the lemon-ginger mixture evenly among sterilized bottles (each bottle will be filled about 1/4 to 1/3 full depending on bottle size). Carefully top each bottle with cold sparkling water, leaving 1–2 inches of headspace. Cap immediately and gently invert once to combine—do not shake vigorously to avoid excessive foaming. Refrigerate bottles upright to keep carbonation stable.

Serve: Chill bottles at least 2 hours before serving. Serve over ice if desired, garnish with lemon slices and mint leaves. Store bottled soda in the refrigerator and consume within 5–7 days for best flavor and fizz.

After steeping, strain the coffee through a fine mesh sieve lined with cheesecloth or a coffee filter into a clean container. Repeat filtering if necessary to remove fines. You should have about 4 cups of smooth cold brew concentrate (can be diluted later).

Sweeten and dilute: If you prefer a ready-to-drink bottled coffee, stir 1 tablespoon simple syrup into the cold brew concentrate and then add 1 cup milk (or dairy-free alternative). This yields a lightly sweetened, ready-to-serve bottled cold coffee. Taste and adjust sweetness or milk ratio to preference.

Bottle and chill: Pour the finished drink into sterilized bottles leaving 1 inch headspace. Cap and refrigerate. Keeps 7–10 days refrigerated. Serve over ice and shake gently before opening if any separation occurs.
