    Harvesting the Grapes

    Harvest ripe Zinfandel grapes, ensuring they have reached optimal sugar levels.

    Crushing the Grapes

    Crush the grapes in a clean fermentation vessel to release the juice. You can use a grape crusher or do it by foot.

    Adding Water

    Add 2 liters of water to the crushed grapes to help dilute the must and facilitate fermentation.

    Adding Sugar

    Dissolve 500 grams of sugar in a small amount of warm water and then add it to the must to increase the sweetness and alcohol content.

    Preparing the Yeast

    Rehydrate 10 grams of wine yeast in a small amount of warm water for about 15 minutes before adding it to the must.

    Mixing in Additives

    Add 1 tsp of potassium metabisulfite to the must to prevent spoilage and optionally add 1 tsp of tannin for structure.

    Fermentation Process

    Cover the fermentation vessel with a clean cloth and let it ferment in a cool, dark place for about 1 to 2 weeks, stirring daily.

    Secondary Fermentation

    After primary fermentation, siphon the wine into another clean vessel, leaving sediment behind. Add 50 grams of oak chips if desired.

    Aging the Wine

    Age the wine for at least 6 months in a cool, dark place to develop its flavors.

    Bottling

    Once the wine has aged, siphon it into sterilized bottles and cork them tightly. Store the bottles upright for a few days and then store them on their sides.
