    Marinate the Salmon

    In a bowl, combine bourbon, soy sauce, brown sugar, and minced garlic. Mix well until the sugar dissolves.

    Prepare the Salmon

    Place the salmon fillets in a large resealable bag or shallow dish. Pour the marinade over the salmon, ensuring each piece is well coated. Seal or cover and refrigerate for at least 30 minutes to 1 hour.

    Cook the Rice

    In a medium saucepan, bring 4 cups of water to a boil. Add 2 cups of rice and a pinch of salt. Stir once, cover, and reduce heat to low. Cook for about 18-20 minutes or until rice is tender and water is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

    Preheat the Grill

    Preheat your grill to medium-high heat. If using briquettes, ensure they are fully lit and covered in ash.

    Grill the Salmon

    Remove salmon from the marinade, letting excess marinade drip off. Brush the grill grates with olive oil. Place the salmon fillets on the grill skin-side down. Grill for about 4-5 minutes on each side, or until the fish flakes easily with a fork.

    Glaze the Salmon

    During the last few minutes of grilling, brush the salmon with any remaining marinade or additional brown sugar to create a glaze.

    Serve the grilled salmon over a bed of rice, garnished with lemon wedges. Enjoy your meal!
