    Prepare the Marinade

    In a large bowl, mix together 2 tablespoons of olive oil, salt, black pepper, and garlic powder. Add the chicken breasts and coat them well with the marinade. Cover and refrigerate for at least 30 minutes.

    Prepare the Vegetables

    While the chicken is marinating, clean the portobello mushrooms and asparagus. Drizzle the remaining 2 tablespoons of olive oil over the mushrooms and asparagus, and season with salt and black pepper.

    Grill the Chicken

    Preheat the grill to medium-high heat. Remove the chicken from the marinade and place it on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

    Grill the Vegetables

    While the chicken is grilling, add the portobello mushrooms and asparagus to the grill. Grill the mushrooms for about 4-5 minutes on each side, and the asparagus for about 3-4 minutes, until they are tender and slightly charred.

    Assemble the Dish

    Once the chicken is cooked, place one portobello mushroom on top of each chicken breast, followed by a handful of grilled asparagus. Top each stack with shredded mozzarella cheese.

    Melt the Cheese

    Close the grill lid and let the cheese melt for about 2-3 minutes. Alternatively, you can place the assembled chicken on a baking sheet and broil in the oven for 2-3 minutes until the cheese is bubbly.

    Serve

    Remove the chicken from the grill and drizzle with roasted red pepper sauce. Garnish with fresh chopped basil before serving.
