Sparkling Wine Making Directions

    Harvesting Grapes

    Harvest the Chardonnay and Pinot Noir grapes from the vineyard, ensuring they are ripe and of high quality.

    Crushing and Pressing

    Once harvested, crush the grapes and press them to extract the juice. Collect the juice in a fermentation tank.

    Fermentation

    Add the yeast and sugar to the grape juice in the fermentation tank. Allow the mixture to ferment for about 2 weeks at a controlled temperature of 18-20°C.

    Malolactic Fermentation

    After the primary fermentation, add malolactic bacteria to the wine to soften the acidity. This process usually takes 1-2 weeks.

    Sulfite Addition

    Add sulfites to the wine to prevent unwanted bacteria and oxidation. Ensure the sulfite levels are around 50 mg/L.

    Secondary Fermentation

    Bottle the wine with a small amount of sugar and yeast to initiate secondary fermentation in the bottle. Cap the bottles and store them horizontally for at least 6 months.

    Riddling

    After aging, perform riddling to collect the sediment in the neck of the bottle. This can be done by hand or using a riddling machine.

    Disgorgement

    Remove the sediment by freezing the neck of the bottle and ejecting the frozen plug. Top off the bottle with a mixture of wine and sugar (dosage).

    Corking and Labeling
