    Prepare the Green Tomatoes

    Wash the green tomatoes and slice them into 1/2 inch thick slices. Season with salt and black pepper.

    Set Up Breading Station

    In one bowl, place the all-purpose flour. In a second bowl, beat the eggs and milk together. In a third bowl, combine the cornmeal, Cajun seasoning, salt, and black pepper.

    Bread the Tomatoes

    Dip each slice of green tomato in the flour, then the egg mixture, and finally coat with the cornmeal mixture. Set aside on a plate.

    In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded tomato slices in batches, frying until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.
