Directions

  1. 1

    Prepare the Steak

Take the filet mignon out of the refrigerator and let it come to room temperature for about 30 minutes before cooking.

  2. 2

    Season the Steak

Rub the filet mignon with olive oil, then season both sides generously with salt and black pepper.

  3. 3

    Preheat the Pan

Heat a heavy skillet (preferably cast iron) over medium-high heat for about 5 minutes until it is hot.

  4. 4

    Sear the Steak

Add the seasoned filet mignon to the hot skillet. Sear for about 4-5 minutes without moving it, until a golden-brown crust forms.

  5. 5

    Flip the Steak

Using tongs, flip the steak and add garlic cloves and fresh rosemary to the pan. Cook for another 3-4 minutes for medium-rare, adjusting the time according to your preferred doneness.

  6. 6

    Add Butter

In the last minute of cooking, add the butter to the pan. Use a spoon to baste the melted butter over the steak for added flavor.

  7. 7

    Rest the Steak

Once the steak is cooked to your liking, remove it from the pan and place it on a cutting board. Allow it to rest for 5-10 minutes before slicing.

  8. 8

    Serve

Slice the filet mignon against the grain and serve immediately with your choice of sides.
