Take the filet mignon out of the refrigerator and let it come to room temperature for about 30 minutes before cooking.

Rub the filet mignon with olive oil, then season both sides generously with salt and black pepper.

Heat a heavy skillet (preferably cast iron) over medium-high heat for about 5 minutes until it is hot.
