    Prepare the Steaks

    Take the filet mignon steaks out of the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This helps them cook evenly.

    Season the Steaks

    Pat the steaks dry with paper towels. Rub both sides of each steak with olive oil and season generously with salt and black pepper.

    Preheat the Pan

    Heat a heavy skillet (preferably cast iron) over medium-high heat until very hot. This should take about 5 minutes.

    Sear the Steaks

    Once the pan is hot, carefully place the steaks in the skillet. Do not overcrowd the pan; if needed, cook in batches. Sear for about 3-4 minutes on one side without moving them.

    Add Aromatics

    After flipping the steaks, add the garlic cloves (smashed) and fresh rosemary to the pan. Continue to cook for an additional 3-4 minutes for medium-rare, or longer if desired.

    Baste with Butter

    During the last minute of cooking, add butter to the pan. Use a spoon to baste the melted butter over the steaks for flavor.

    Check Doneness

    Use a meat thermometer to check the internal temperature. For medium-rare, it should read 130°F (54°C). Remove from heat when desired doneness is reached.

    Rest the Steaks

    Transfer the steaks to a plate and cover loosely with foil. Let them rest for about 5-10 minutes before serving to allow the juices to redistribute.
