Brewing Process

    Mashing

    Begin by heating 3 gallons of water to 165°F (74°C).

    Add the pale malt, crystal malt, and caramel malt to the heated water. Stir well and maintain the temperature at 150°F (65°C) for 60 minutes. This process will convert the starches in the grains into sugars.

    Sparging

    After mashing, heat an additional 2 gallons of water to 170°F (77°C).

    Sparge the grain mixture by slowly pouring the hot water over the grains to rinse out the sugars. Collect the runoff in a brew kettle.

    Boiling

    Bring the collected wort to a boil.

    Once boiling, add the bittering hops (1 oz of Cascade) and boil for 60 minutes, stirring occasionally.

    With 15 minutes remaining in the boil, add the aroma hops (0.5 oz of Cascade).

    Cooling

    After the boil is complete, cool the wort quickly using a wort chiller or an ice bath.

    Cool the wort to about 70°F (21°C) before transferring it to a sanitized fermentation vessel.

    Fermentation

    Pitch the yeast into the cooled wort and seal the fermentation vessel with an airlock.

    Allow the beer to ferment for 1-2 weeks at a stable temperature of around 68°F (20°C).

    Bottling

    After fermentation is complete, prepare a priming solution by dissolving 3 oz of priming sugar in 2 cups of boiling water.

    Add the priming solution to the beer and gently mix. Bottle the beer in sanitized bottles and cap them.

    Conditioning

    Let the bottled beer condition at room temperature for 1-2 weeks.
