Marinate the Salmon
In a medium bowl, combine bourbon, soy sauce, honey, olive oil, salt, and black pepper. Mix well to create the marinade.

Prepare the Marinade
Add the salmon fillets to the marinade, ensuring they are fully coated. Cover the bowl and refrigerate for at least 30 minutes, allowing the flavors to meld.

Prepare the Salad Base
While the salmon is grilling, wash and dry the mixed greens. Place them in a large salad bowl.

Add Toppings
Thinly slice the red onion and add it to the mixed greens. Crumble the feta cheese over the salad, and slice the Roma tomatoes into wedges and add them as well.

Assemble the Salad
Once the salmon is cooked, allow it to rest for a few minutes before slicing it into portions. Place the grilled salmon on top of the mixed greens and toppings. Sprinkle croutons over the salad.

Drizzle additional olive oil or your favorite dressing on top if desired. Serve the salad immediately while the salmon is warm.
