    Trim and pound

    Trim any excess fat from the chicken breasts. Place each breast between two pieces of plastic wrap and gently pound with a meat mallet or rolling pin to an even thickness about 1/2 inch (12 mm). This ensures even cooking.

    Season

    Brush or rub each chicken breast with 1 tablespoon extra-virgin olive oil. Season both sides evenly with 1 1/2 tsp kosher salt and 1 tsp black pepper.

    Preheat air fryer

    Preheat the air fryer to 380°F (193°C) for 3 minutes. If your model recommends no preheat, set the temperature and allow the basket to come to temperature for 2–3 minutes.

Oreganata Topping

    Make topping

    In a medium bowl combine 1 cup fresh breadcrumbs, 1/2 cup grated Parmesan, 2 tablespoons finely chopped fresh oregano (or 1 tsp dried), 2 minced garlic cloves, 1 tablespoon lemon zest, 2 tablespoons extra-virgin olive oil, 1/4 tsp red pepper flakes, 1/2 tsp salt, and 1/4 tsp black pepper. Mix until the oil evenly coats the crumbs and the mixture holds together slightly when pressed.

    Toast (optional, for crunch)

    For extra crunch, spread the topping on a baking sheet and toast in a 375°F (190°C) oven for 5–7 minutes or in the air fryer at 350°F (175°C) for 3–4 minutes, shaking once, until golden. Let cool slightly before using.

    Press topping onto chicken

    Divide the oreganata topping evenly among the prepared chicken breasts. Press the topping firmly onto the top of each piece so it adheres; use a spoon or the back of a measuring cup to compact the crumbs.

Air Frying & Finish

    Arrange in basket

    Lightly spray or brush the air fryer basket with oil or use perforated parchment. Place the topped chicken breasts in a single layer in the basket, topping-side up. Do not overlap; cook in batches if necessary.

    Air fry

    Air fry at 380°F (193°C) for 10–12 minutes. After 10 minutes check for an internal temperature of 165°F (74°C) using an instant-read thermometer inserted into the thickest part. If the topping is golden and the chicken is at temperature, it's done; if not, continue 1–2 minute increments until done. Total cook time will be about 10–14 minutes depending on thickness and air fryer model.

    Rest

    Remove the chicken to a plate and let rest 3–5 minutes. Resting allows juices to redistribute and topping to set.

    Squeeze the juice of the reserved lemon over each breast, sprinkle chopped fresh parsley and a few capers if using, and serve with lemon wedges on the side.
