Prepare and season fish

Pat dry the red snapper fillets. Season both sides with salt and black pepper. Lightly dredge each fillet in the flour, shaking off any excess.

Toast almonds

In a dry skillet over medium heat, toast the slivered almonds until golden and fragrant, about 4-5 minutes. Remove from pan and set aside.

Sear the snapper

In a large skillet, heat olive oil and 4 tablespoons butter over medium-high heat. When shimmering, add the snapper and sear 2-3 minutes per side, until cooked through. Transfer to a warm plate.

Make brown butter and aromatics

In the same skillet, add the remaining 2 tablespoons butter and cook until it browns and smells nutty, about 2-3 minutes. Add minced garlic and cook 30 seconds until fragrant.

Finish sauce

Deglaze with white wine (if using) and scrape up any browned bits. Stir in lemon juice and lemon zest; simmer 1 minute to reduce slightly.

Combine almonds and finish

Return the toasted almonds to the pan and toss to coat in the sauce. Add chopped parsley and remove from heat.

Plate and serve

Nestle the snapper back in the pan to warm through for 1 minute, then transfer to plates. Spoon almondine butter sauce over the fillets and garnish with extra parsley. Serve with lemon wedges.
