Prepare pan and combine dry ingredients

Preheat oven to 350°F (175°C). Lightly butter or spray a 9-inch pie pan. In a large bowl, combine 1.75 cups graham cracker crumbs, 2 tablespoons granulated sugar, and 1/4 teaspoon coarse sea salt; whisk to blend.

Add butter and beer

Pour 6 tablespoons melted butter and 2 tablespoons room-temperature light lager into the crumb mixture. Stir with a fork until evenly moistened. The mixture should clump when pressed together; add up to 1 teaspoon more beer if too dry, or up to 1 tablespoon more crumbs if too wet.

Form and bake crust

Press the crumb mixture firmly and evenly into the bottom and up the sides (about 1/2 inch high) of the prepared 9-inch pie pan, using the bottom of a measuring cup to compact. Bake on the middle rack 8–10 minutes until set and lightly golden. Remove and cool on a rack while making the filling. Reduce oven to 325°F (162°C) if you plan to bake the pie again; otherwise cooling is fine.

Filling (Creamy Beer Custard)

Warm creams and dissolve sugars

In a medium saucepan, combine 1 cup whole milk, 1 cup heavy cream, 3 tablespoons warmed amber ale, 3/4 cup light brown sugar, and 2 tablespoons granulated sugar. Warm over medium heat, whisking occasionally, until the mixture is hot and sugar is dissolved and just starting to steam (do not boil), about 6–8 minutes.

Temper eggs

While the milk heats, in a medium bowl whisk together 4 egg yolks, 1 whole egg, and 2 tablespoons cornstarch until smooth and slightly pale. Once the milk mixture is hot, slowly ladle about 1/3 cup of the hot liquid into the egg mixture while whisking constantly to temper the eggs. Repeat with two more 1/3 cup additions until about half the hot liquid has been incorporated, then slowly whisk the tempered egg mixture back into the saucepan with the remaining hot milk/cream mixture.

Thicken the custard

Return the saucepan to medium-low heat and cook, stirring constantly with a wooden spoon or heatproof spatula, until the mixture thickens and coats the back of the spoon, about 3–6 minutes. Do not boil; if it simmers, reduce heat. Remove from heat immediately when thickened.

Finish the custard

Whisk in 2 tablespoons cold diced unsalted butter, 1 teaspoon vanilla extract, and 1/4 teaspoon fine sea salt until fully incorporated and glossy. Taste for sweetness and beer balance; stir in up to 1 tablespoon additional warmed amber ale if you want a stronger beer note. Let the custard cool 8–10 minutes, stirring occasionally to release steam.

Bake-in or chill set

Pour the warm custard into the cooled crust. If you want a lightly baked set, place the filled pie on a rimmed baking sheet and bake at 325°F (162°C) for 12–15 minutes until edges are just set and center slightly wobbly. For a no-bake finish, simply cover surface with plastic touching the custard to prevent a skin and chill the pie in the refrigerator at least 4 hours or overnight until fully set. Either method works — oven set gives a firmer slice; chilled gives a silkier texture.

Frosting & Finish (Whiskey-Buttercream Frosting & Garnish)

Make the frosting

In a stand mixer fitted with the paddle (or using a hand mixer), beat 1 cup room-temperature unsalted butter on medium speed until smooth and pale, about 2 minutes. Add 1/2 cup room-temperature cream cheese if using and beat until combined. Gradually add 3 cups sifted powdered sugar, 1/2 teaspoon vanilla extract, and 2 tablespoons bourbon while mixing on low speed. If the frosting becomes too stiff, add 1 tablespoon light amber beer or 1–2 teaspoons milk to reach spreadable consistency. Finish with 1/8 teaspoon coarse sea salt and beat 20–30 seconds more until fluffy.

Chill briefly

If the filling was chilled and very cold, let the frosting sit at room temperature 10 minutes so it is easily spreadable but not runny. If the filling was baked and warm, fully cool the pie to room temperature and then chill 30–60 minutes so the frosting does not melt.

Frost and garnish

Using an offset spatula, spread the whiskey-buttercream in an even layer over the chilled/firmer custard. Sprinkle 1/4 cup toasted chopped pecans around the edge or across the top. Optionally drizzle 1 tablespoon light caramel or microfoam caramel in a thin zigzag over the surface. For added presentation, dust a light pinch of powdered sugar or a tiny flake of flaky sea salt.

Chill before serving

Chill the finished pie at least 30 minutes to let the frosting set and flavors marry. For best slicing, chill 2 hours. Remove from fridge 10 minutes before serving to allow the buttercream to soften for cleaner slices.
