Chill glass

Place a pint glass (or Collins) in the freezer for 5–10 minutes or fill with ice while preparing ingredients to chill it.

Build base

In a mixing glass or small cocktail shaker, add the ginger liqueur (or ginger syrup), fresh lemon juice, and honey syrup. Add the orange bitters. If using a shaker, add a few ice cubes and shake vigorously for 8–10 seconds to combine and slightly chill.

Combine with beer

Discard ice from the chilled serving glass if used. Add fresh ice to the serving glass (about 3/4 cup). Strain the shaken mixture into the glass over the ice. Slowly and gently pour the Spotted Cow beer down the side of the glass so the beer mixes without foaming excessively. Stir once gently with a long bar spoon to combine — about 3 slow turns.

Adjust sweetness and acidity

Taste and if needed add up to 0.25 oz more honey syrup for sweetness or a few drops more lemon juice for brightness. Stir gently to incorporate any additions.

Garnish & Serve

Garnish the cocktail with a lemon wheel on the rim and a sprig of fresh mint tucked into the top. Optionally slap the mint between your palms before garnishing to release oils and aroma.

Serve immediately with a straw or without, encouraging small sips to appreciate the balance of farmhouse ale funk, ginger brightness, and honeyed sweetness.
