Form patties

Divide the ground beef into 4 equal portions (about 4 oz / 113 g each). Gently shape each portion into a patty about 3/4-inch thick and slightly wider than the bun. Make a shallow indentation in the center of each patty with your thumb to reduce doming while cooking. Do not overwork the meat.

Season

Season both sides of each patty with kosher salt and freshly ground black pepper just before cooking.

Cook

Heat a skillet or griddle over medium-high heat and add 1 tablespoon vegetable oil, spreading to coat. When the pan is hot and shimmering, place patties down leaving space between them. Cook for 3-4 minutes without moving to develop a crust. Flip and cook 2-4 minutes more until desired doneness (about 130°F for medium-rare, 140°F medium, 160°F well done). Remove from pan and let rest on a plate for 3 minutes.

Buns & Condiments

Toast buns

While patties rest, spread softened butter on cut sides of buns. Toast them face-down in the same skillet over medium heat for 1-2 minutes until golden and slightly crisp. Alternatively, broil for 30–60 seconds, watching closely.

Assemble condiments

Spread mayonnaise on the bottom bun and ketchup on the top bun (or apply ketchup directly to the patty if you prefer).

Prepare vegetables

Wash and dry lettuce leaves. Slice the tomato into 1/4-inch thick rounds. If using red onion, slice into thin rings and separate.

Assemble burger

On the bottom toasted bun with mayonnaise, place 1 lettuce leaf, then a cooked beef patty, 1 tomato slice, and a few red onion rings if using. Spread ketchup on the top bun and place it over the patty. Serve immediately.

Fries

Preheat oven to 425°F (220°C). Spread 16 oz frozen fries in a single layer on a baking sheet. Toss with 1 tablespoon vegetable oil to help crisp. Bake 18–25 minutes, flipping once halfway, until golden and crisp. Remove from oven and immediately season with 1 teaspoon fine sea salt.

Pan-fry or deep-fry method (optional)

Heat oil in a deep fryer or deep skillet to 350°F (175°C). Fry frozen fries in batches for 3–5 minutes until golden and crisp. Drain on paper towel and season with salt while hot.
