Trim, clean, and blanch
Trim any brown papery bits from fiddleheads and remove damaged ends. Rinse them several times under cold running water, rubbing gently to remove grit and any stubborn brown bits.
Bring a large pot of water to a rolling boil. Add 1 tablespoon coarse salt. Add fiddleheads and blanch for 2 minutes exactly (fiddleheads should turn bright green and begin to tenderize).
While fiddleheads blanch, prepare an ice bath with the 4 cups of ice and remaining cold water in a large bowl. After 2 minutes, transfer fiddleheads with a slotted spoon into the ice bath to stop cooking. Let sit 2–3 minutes, then drain well and pat dry with paper towels.

Sweat aromatics
In a large skillet over medium heat, melt 2 tablespoons of the butter with 1 tablespoon olive oil. Add the finely minced shallot and a pinch of salt; cook gently 2–3 minutes until translucent but not browned. Add the minced garlic and cook 30–45 seconds until fragrant.
Deglaze the pan by adding 2 tablespoons dry white wine (or vegetable broth). Stir and let simmer 1–2 minutes to reduce slightly and concentrate flavor.
Finish sauce
Reduce heat to low. Stir in the remaining 1 tablespoon butter, 2 tablespoons light cream, 1 teaspoon lemon zest, and 2 teaspoons lemon juice. Add 3 tablespoons finely grated Parmesan and stir until melted and slightly thickened — about 1 minute. Taste and season with black pepper and salt to taste. If you prefer a little heat, add 1 teaspoon red pepper flakes now or reserve to sprinkle at the end.
Toss fiddleheads
Add the blanched and drained fiddleheads to the skillet. Over medium-low heat, toss them in the sauce for 2–3 minutes until heated through and well coated, taking care not to overcook — they should remain slightly firm with a gentle bite. Stir in 2 tablespoons chopped flat-leaf parsley just before removing from heat.
Optional Finish & Serving
If using toasted breadcrumbs: in a small skillet, briefly toast 1 tablespoon panko in 1 teaspoon butter over medium heat until golden, stirring constantly, then sprinkle over the finished fiddleheads for crunch.
Transfer fiddleheads to a warmed serving plate, sprinkle an extra tablespoon Parmesan if desired, add a crack of fresh black pepper, and serve with lemon wedges on the side. Serve immediately.
