Build & Shake
Combine base ingredients
Into a cocktail shaker add 3 oz fresh orange juice, 0.5 oz fresh lemon juice, 0.5 oz orange liqueur, 0.5 tsp simple syrup, and the 0.5 oz egg white (if using).
Dry shake
Without ice, seal the shaker and shake vigorously for 10–15 seconds to emulsify the egg white and create foam.
Wet shake
Add 6 ice cubes to the shaker, then shake again vigorously for 10–12 seconds to chill and dilute slightly.
Double strain
Open the shaker and strain the chilled mixture through a fine strainer into your prepared flute or coupe, leaving behind ice shards and any solids.
Finish & Serve
Top with sparkling wine
Slowly top the shaken orange mixture with 3 oz chilled champagne or dry sparkling wine. Pour gently to preserve the foam and avoid excessive foaming over the rim.
Garnish & bitters
Add an orange wheel or twist to the rim or float it on the foam. Optionally add 2 dashes of Angostura bitters on the foam and use a toothpick to make a simple decorative swirl.
Serve
Serve immediately while the drink is bright, chilled, and effervescent.
