In a blender or using an immersion blender, combine fresh raspberries (3 oz) and strawberries (3 oz) with the peach purée (2 oz). Add the simple syrup (1 oz) and fresh lemon juice (0.5 oz) to balance acidity. Blitz until smooth, about 20–30 seconds.

Make purée

If you prefer a silky texture, strain the blended mixture through a fine-mesh sieve into a bowl, pressing with the back of a spoon to extract as much liquid as possible. Discard seeds and solids. You should have roughly 4–5 oz of smooth purée.

Chill the purée in the refrigerator for at least 10 minutes if not already cold.

Add ice (enough to fill the pitcher about one-third) to a 2-quart pitcher. Pour the chilled fruit purée into the pitcher. Open the chilled bottle of Dark Horse Rosé (750 ml) and slowly pour it into the pitcher over the purée, gently stirring once or twice to combine—avoid vigorous stirring to preserve wine effervescence and delicate aromatics. Taste and, if desired, top with club soda (about 4 oz) to add light effervescence and lighten the body. Adjust sweetness by adding up to 0.5 oz more simple syrup if needed.

For a pitcher (serves 4–6)

Place 1–2 oz of the fruit purée into a chilled wine glass. Add 2–3 ice cubes, then slowly pour about 5 oz (150 ml) of chilled Dark Horse Rosé into the glass. Gently stir once with a bar spoon to integrate. Top with 1 oz club soda if you want a spritz.

For individual glasses (per serving)

Garnish each glass with 2–3 fresh raspberries threaded on a small pick and a thin peach slice or strawberry fan on the rim.

Serve immediately while chilled. Sip and enjoy the raspberry, peach, and strawberry notes highlighted against the bright, slightly dry rosé.
