prepare potatoes

Wash and scrub potatoes. Cut each potato lengthwise into 6–8 thick wedges (steak-fries). Place wedges in a large bowl of cold water and soak for 20–30 minutes to remove excess starch. Drain and pat completely dry with kitchen towels.

season potatoes

In a large bowl, toss dried potato wedges with 2 tablespoons (about 30 ml) of the oil and the coarse salt, black pepper, garlic powder, and paprika until evenly coated.

choose cooking method

Frying method (crispiest): Heat 2–3 cups vegetable oil in a deep skillet or Dutch oven to 350°F (175°C). Fry potato wedges in batches 3–5 minutes until golden and just tender. Remove to a paper-towel-lined tray and let rest. Return to 375°F (190°C) and fry a second time for 1–2 minutes until deep golden and crisp. Drain on paper towels and season immediately with a pinch more salt. Oven method (healthier): Preheat oven to 425°F (220°C). Spread seasoned wedges in a single layer on a baking sheet lined with parchment, cut-side down. Roast 25–30 minutes, flipping once halfway through, until golden and crisp on edges. For extra crispness, broil 1–2 minutes at the end but watch carefully to avoid burning.

While fries are finishing, cook bacon: lay slices in a cold skillet, turn heat to medium and cook until crispy, about 8–10 minutes, flipping as needed. Alternatively bake on a foil-lined sheet at 400°F (200°C) for 15–18 minutes. Drain on paper towels and when cool, chop or crumble into bits.

assemble

Place hot fries on a large oven-safe platter or baking sheet. Evenly distribute shredded cheddar over fries. Scatter bacon bits on top. If using the oven method, return loaded fries to the oven at 350°F (175°C) for 3–5 minutes or until cheese is melted. For fried fries, use a broiler for 1–2 minutes to melt cheese (watch closely).

finish

Remove from oven/broiler, sprinkle sliced green onions and chopped parsley (if using) over the melted cheese and bacon. Serve immediately.

Dressing & Serving

Pour ranch dressing into a small serving bowl. Stir in hot sauce if using for a spicy kick. Place alongside the platter of ultimate fries for dipping.

Serve 2–4 people: provide napkins and optional additional salt or hot sauce at the table.
