Prep and season chicken
Preheat oven to 375°F (190°C). Pat chicken breasts dry with paper towels. If breasts are very thick, butterfly or pound them to an even thickness about 3/4 inch. Rub both sides with olive oil, then season evenly with salt, black pepper, and paprika.
Place the seasoned breasts in a lightly oiled baking dish large enough to hold them in a single layer. Set aside while you prepare the gravy (or refrigerate up to 1 hour if prepping early).
Mushroom-Chicken Gravy
Cook aromatics and mushrooms
In a large skillet over medium heat, melt the butter. Add the chopped onion and cook 4–5 minutes until softened and translucent. Add the minced garlic and cook 30 seconds until fragrant. Add the sliced mushrooms and cook 6–8 minutes, stirring occasionally, until they release their liquid and begin to brown.
Build the gravy
Slowly pour in the chicken stock while whisking or stirring to avoid lumps. Bring the mixture to a gentle simmer and cook 3–4 minutes to thicken. Stir in the heavy cream, Worcestershire sauce, dried thyme, and soy sauce. Simmer 2–3 minutes until the gravy is glossy and coats the back of a spoon. Taste and adjust seasoning with salt and pepper if needed. Stir in the lemon juice and chopped parsley off the heat.
If the gravy becomes too thick, thin with up to 1/4 cup additional chicken stock or water to reach a spoonable consistency.
Assemble and Bake
Smother the chicken
Spoon and pour about two-thirds of the hot mushroom-chicken gravy evenly over the prepared chicken breasts in the baking dish, coating them well. Reserve the remaining gravy for serving or extra saucing after baking.
Bake uncovered
Place the baking dish in the preheated oven and bake for 18–22 minutes, or until the internal temperature of the thickest chicken piece reaches 165°F (74°C). Baking time will vary with thickness — check early to avoid overcooking.
Add cheese and finish
Remove the dish from the oven. Spoon any accumulated pan juices into the reserved gravy if desired. Evenly sprinkle the shredded mozzarella and the optional grated Parmesan over each breast. Return the dish to the oven and bake an additional 4–6 minutes, or until the cheese is melted and lightly golden. For a browned top, broil 1–2 minutes watching carefully.
Let the chicken rest 3–5 minutes after baking. Garnish with fresh parsley and spoon the reserved mushroom gravy over the chicken before serving.
