Prepare onions

Peel the onions and trim the root and stem ends just enough to remove the tough outer, keeping rings intact. Slice the onions crosswise into 1/4- to 3/8-inch thick rings. Separate rings into individual circles and set aside. Reserve any small inner pieces for a thinner batch or snack.

Dust onions

Place 1/2 cup fine dry breadcrumbs or 1/2 cup flour in a shallow bowl or plate. Lightly toss onion rings in the dry dust to coat — this helps the batter adhere. Shake off excess and transfer rings to a tray.

Make batter

In a medium bowl whisk together 1.5 cups all-purpose flour, 1/4 cup cornstarch, 1 tsp baking powder, 1.5 tsp salt, 1/2 tsp black pepper and 1 tsp paprika. In a separate bowl whisk 1 egg with 1 cup milk until combined. Add the wet mix to the dry ingredients and stir until just combined. Gradually whisk in 3/4 cup cold beer (or cold sparkling water) until the batter is smooth and thick but pourable. If using panko for extra crunch, place 1 cup panko in a shallow dish for dredging after battering.

Heat oil

Pour vegetable oil into a deep-frying pan or Dutch oven to a depth of about 1.5 to 2 inches (roughly 1.25–1.5 cups depending on pan). Heat oil over medium-high until it reaches 350°F (175°C) — if you don't have a thermometer, test by dropping a small amount of batter: it should sizzle and rise immediately without browning too fast.

Batter and fry

Working in small batches (4–6 rings at a time depending on pan size), dip dusted onion rings into the batter, letting excess drip back into the bowl. If using panko, immediately dredge the battered ring in panko to coat. Carefully lower rings into the hot oil using tongs or a slotted spoon. Fry until golden brown and crisp, about 2 to 3 minutes per side (total 3–5 minutes depending on ring size and oil temp). Avoid overcrowding to keep oil temperature steady.

Drain and season

Use a slotted spoon to transfer cooked rings to a wire rack set over a baking sheet or to paper towels to drain briefly. While still hot, sprinkle with 1/2 tsp finishing salt and chopped parsley if using. Repeat frying with remaining rings, letting oil return to temperature between batches.

Dipping Sauce

Combine 1/2 cup mayonnaise, 2 tbsp ketchup, 1 tsp hot sauce, 1 tsp yellow mustard, 1/4 tsp garlic powder, 1 tsp lemon juice and 1/8 tsp salt in a small bowl. Whisk until smooth and taste; adjust seasoning or hot sauce to preference. Chill in the refrigerator for at least 10 minutes to let flavors meld, or serve immediately.

Serving

Arrange onion rings on a platter, garnish with lemon wedges and a sprinkle of parsley. Serve immediately while hot and crisp with the dipping sauce on the side.
