Method
Preparation & Sanitation
Sanitize
Thoroughly sanitize all fermenting equipment: primary fermenter (carboy or food-grade bucket), airlock, siphon, stirring spoon, measuring tools and bottles if bottling. Use a no-rinse sanitizer and follow manufacturer's contact time.
If using Campden/potassium metabisulfite for microbial control, dissolve the listed amount in 100 ml of cooled boiled water and add to the cider. Let sit covered for 24 hours before pitching yeast to allow SO2 to dissipate. (Optional step; skip if using unpasteurized cider you want fully native-ferment.)
Must Preparation
Mix base cider and sugars
Pour 4 L of fresh apple cider into the sanitized primary fermenter. Warm the 200 g light brown sugar with ~200 ml of the water (not boiling, just warm to dissolve), stirring until completely dissolved, then add the sugar syrup to the cider. Add the 120 g honey directly and stir to incorporate thoroughly.
Add raspberries
Warm the 600 g raspberry puree gently with the remaining ~300 ml of water to loosen it (do not boil). Strain if you prefer a clearer final product, or add as-is for more fruit character. Add the puree to the cider-honey mixture and stir to combine. This combined liquid is the must.
Adjust acidity and check starting gravity
Add 1 tsp acid blend to the must and stir. Measure specific gravity with a hydrometer or refractometer — target starting gravity ~1.050–1.060 for a sweet, moderately strong cider. Adjust with small amounts of sugar if necessary to reach your target.
Yeast Preparation & Pitching
Rehydrate yeast
Rehydrate the champagne yeast according to package directions: sprinkle into ~50 ml of sterile, warm (35–38°C) water with a pinch of sugar for 10–15 minutes, or follow manufacturer's rehydration process. Add yeast nutrient and energizer to the must and stir.
Pitch yeast
When the must temperature is between 18–22°C, pitch the rehydrated yeast into the fermenter and gently aerate by stirring vigorously for 1–2 minutes to introduce oxygen for yeast health.
Primary Fermentation
Ferment
Close the fermenter and fit an airlock. Place in a dark, temperature-stable location between 18–22°C. Primary fermentation should begin within 24–48 hours and be active for 5–10 days. Monitor airlock activity and gravity. The raspberry will contribute yeast nutrients and flavor; the fruit may create a robust, slightly slower fermentation—be patient.
Degassing and monitoring
After the first 3–5 days, gently stir or swirl the must to degas if it seems excessively foamy (do this carefully to avoid oxidation). Take gravity readings every 2–3 days until it approaches terminal gravity (around 1.000–1.005 depending on yeast and temperature).
Secondary & Fruit Conditioning
Rack to secondary
When fermentation has slowed and gravity is near target (usually after 7–14 days), siphon the cider off the heavy lees into a sanitized secondary carboy to clarify and condition. Avoid transferring sediment. Top up with boiled-and-cooled water if necessary to minimize headspace.
Optional stabilization for sweetness
If you plan to back-sweeten and keep residual sweetness, add 0.5 tsp potassium sorbate and the remaining 1 tsp potassium metabisulfite (or crushed campden tablet) at this stage following manufacturer's guidance; wait 24 hours before sweetening. This step helps prevent renewed fermentation after sweetening. Note: adding sulfites is optional and will impart some preservative character.
Condition
Allow the cider to clarify on the secondary for 2–4 weeks at 10–15°C. During this time the raspberry character will integrate. Take periodic gravity readings; when it is stable for several days, proceed to bottling or stabilization/sweetening.
Sweetening & Carbonation
Back-sweeten (if desired)
If the cider is drier than you like, prepare a small syrup: dissolve desired amount of brown sugar or honey in 50–100 ml boiling water, cool, and add to a measured sample of cider to taste. Scale the amount proportionally to the whole batch, then add gradually to the main batch while gently stirring. If you added potassium sorbate and metabisulfite earlier, this will be stable. If not, you risk re-fermentation.
Priming for bottles
If bottling carbonated cider, dissolve 85 g corn sugar in 200 ml boiling water, cool, and mix with the entire batch by siphoning the cider onto the priming solution in a sanitized keg or bottling bucket to evenly distribute. Bottle into sanitized bottles and cap. Condition at room temperature for 1–2 weeks for carbonation to develop.
Kegging
If kegging, you can force-carbonate to desired volumes (2.2–2.8 volumes CO2 for a lightly sparkling cider) and then cold-condition for 1–2 weeks to allow flavors to marry.
Finishing & Serving
Cold crashing & clarification
For a clearer final product, cold crash bottles or the keg at 1–4°C for 48–72 hours before serving. This will help drop remaining yeast and particulates.
Serve
Serve chilled (4–8°C). The finished Intergalactic Raspberry will be sweet with bright raspberry aroma layered over apple cider base. Expected residual sweetness can be adjusted at the sweetening step.
Storage
Store bottles in a cool, dark place. If stabilized and sweetened, shelf-stable; otherwise refrigerate to slow any continued fermentation.
