Salad Base
Prepare greens
Wash and dry the mixed salad greens thoroughly (use a salad spinner or pat dry). Tear any large leaves into bite-sized pieces and place in a large salad bowl.
Prepare tomatoes
Halve the cherry or grape tomatoes. If using larger tomatoes, cut into 1/2-inch pieces.
Cornbread
Cube cornbread
Cut the prepared cornbread into 1-inch cubes. Remove any very crumbly bits and reserve for another use or to crumble on top later.
Toast cornbread cubes
Heat a skillet over medium heat and add 1 tablespoon unsalted butter. When butter is melted and foamy, add cornbread cubes in a single layer. Toast, stirring occasionally, until cubes are golden brown and slightly crisp on all sides, about 5-7 minutes. Transfer to a plate to cool slightly.
Dressing
Combine dressing ingredients
In a small jar or bowl, combine 3 tablespoons extra-virgin olive oil, 1 tablespoon apple cider vinegar, 1 teaspoon Dijon mustard, 1 teaspoon honey, 1/2 teaspoon finely minced garlic, 1/2 teaspoon salt, and 1/4 teaspoon freshly ground black pepper.
Assembly
Just before serving, drizzle about half of the dressing over the salad bowl (reserve the rest for guests to add more). Gently toss to coat all ingredients evenly but avoid bruising the greens.
Scatter the warm toasted cornbread cubes over the top of the tossed salad so they remain slightly crisp. If desired, add additional shredded cheddar or pecans as a garnish.
Serve immediately with remaining dressing on the side. Leftover dressing can be refrigerated up to 5 days; toasted cornbread is best served the same day for crunch.
