Drain and dry pickles
Open jar of dill pickle chips and place them in a colander. Rinse briefly under cold water to remove excess brine (optional to reduce saltiness). Pat each chip thoroughly dry with paper towels. Excess moisture will make the batter slide off; aim for as dry as possible.
Set up breading station
Arrange three shallow bowls or wide plates: 1) seasoned flour mix, 2) egg-beer wash, 3) breadcrumbs/panko. In bowl 1 combine all-purpose flour, cornstarch, fine cornmeal (if using), baking powder, garlic powder, onion powder, paprika, cayenne, kosher salt, and black pepper. Whisk to combine. Reserve 1/2 cup of this seasoned flour for the breadcrumb station if you want extra adhesion.
Make egg-beer batter
In bowl 2 whisk together the cold water, eggs, and beer (or club soda) until just combined. Add 1/2 cup of the seasoned flour mix and whisk until a slightly thick, smooth batter forms. The consistency should coat the back of a spoon — not too thin. If batter is too thick, add 1 tablespoon cold water; if too thin, add 1 tablespoon flour.
Prepare frying oil
Pour vegetable oil into a heavy-bottomed pot or deep skillet to a depth of 1.5–2 inches (about 3–4 cups). Heat over medium-high to reach 350°F (175°C). If you don't have a thermometer, test with a small drop of batter: it should sizzle and brown within 45–60 seconds.
Breading & Frying
Bread the pickles
Working in small batches (6–8 chips at a time), dredge each dried pickle chip first in the seasoned flour to coat, shaking off excess. Dip into the egg-beer batter, allowing excess to drip back into the bowl, then press into the breadcrumbs/panko (mix a few tablespoons of reserved seasoned flour into the breadcrumbs for better adhesion). Place breaded pickles on a sheet tray or plate lined with paper towels while you fry the first batch.
Fry until golden
When oil is at 350°F (175°C), carefully add breaded pickle chips in a single layer without crowding (work in batches). Fry for 1.5–2.5 minutes, turning once, until golden brown and crisp. Use a slotted spoon or spider to transfer fried pickles to a paper towel-lined rack to drain. Sprinkle lightly with salt while hot. Let oil return to temperature between batches.
Finish and keep warm
If making ahead, keep batches warm on a baking sheet in a single layer in a 200°F (95°C) oven while you finish frying remaining chips. Serve immediately for best crispness.
Cajun Ranch
While the oil heats or while pickles are frying, whisk together mayonnaise, sour cream, and buttermilk until smooth. Add prepared ranch seasoning, smoked paprika, cayenne, garlic powder, lemon juice, hot sauce (if using), minced chives, salt, and black pepper. Taste and adjust seasoning — add more cayenne or hot sauce for heat, or a splash more buttermilk for a thinner dipping consistency. Chill in the fridge for at least 10 minutes to let flavors meld.
Serve: Arrange fried pickles on a platter with the Cajun Ranch in a small bowl for dipping. Garnish with extra chopped chives and a sprinkle of smoked paprika if desired.
