Prepare Tomatoes
Wash the tomatoes and pat them dry. Slice each tomato into 1/4-inch (6 mm) thick rounds. If using larger tomatoes, cut slices to roughly the same diameter as the mozzarella.
Prepare Mozzarella
Drain the fresh mozzarella and pat lightly with paper towel to remove excess moisture. Slice the mozzarella into 1/4-inch (6 mm) rounds roughly matching the tomato slices. If using burrata, tear into pieces instead of slicing.
Assemble
On a large platter or individual plates, arrange tomato and mozzarella slices alternating (tomato, mozzarella, tomato) in a single overlapping layer or in a circular pattern. Tuck whole basil leaves between slices and scatter remaining leaves on top.
Season and Dress
Drizzle the extra-virgin olive oil evenly over the arranged salad (about 3 tbs). Sprinkle sea salt evenly (use about 1 tsp; adjust to taste) and grind the black pepper over the top (about 1 tsp). Finally, drizzle the balsamic glaze lightly (about 1 tbs) across the salad for sweet-acid contrast.
Rest and Serve
Let the salad rest at room temperature for 5–10 minutes to allow flavors to mingle. Taste and adjust salt, pepper, or balsamic glaze as desired. Serve immediately.
