In a 1.5–2 quart pitcher, pour 1 pitcher (about 1 bottle equivalent) of chilled California Cabernet Sauvignon. Add 3 tablespoons peach brandy and 1 cup chilled orange juice. Stir gently to combine.

Combine liquids

Taste the mixture. If you prefer a slightly sweeter sangria, add 2 teaspoons simple syrup and stir until dissolved. Adjust sweetness to your preference (add up to 1 tablespoon total if needed).

Sweeten (optional)

Cover the pitcher and refrigerate the sangria base for at least 1 hour (ideally 2–4 hours) so the flavors meld and the fruit infuses the wine.

Chill

Just before serving, gently stir in 2 cups chilled Sprite (or lemon-lime soda) to retain carbonation. Do not add soda far in advance or it will go flat.

While the sangria chills, thinly slice 1 navel orange and 1/2 lemon. Pit and slice 1 peach into wedges. Halve 3/4 cup red seedless grapes. Place all prepared fruit into the chilled pitcher with the sangria base so the fruit can macerate and release flavor (add fruit when you first refrigerate for best infusion).

Prepare fruit

Fill individual glasses with 1/2 to 1 cup ice as desired. Pour sangria into glasses, making sure each pour includes some fruit pieces. Garnish each glass with a fresh mint sprig and, if desired, a thin wheel of orange on the rim.

Serve

Leftover sangria (without added ice) will keep covered in the refrigerator for up to 48 hours. Add soda and ice just before serving again to maintain freshness and fizz.
