Prepare calamari

Pat calamari steaks dry with paper towels. If tubes are large, slice into 1/2-inch thick rings or leave whole/halved steaks depending on preferred presentation. Keep refrigerated until ready to dredge.

Make dredge and fry

In a shallow bowl, whisk together flour, cornmeal, kosher salt, black pepper, and cayenne. Heat 1 cup neutral oil in a large skillet over medium-high heat until shimmering and a small pinch of flour sizzles immediately (about 350°F/175°C if using a thermometer). Lightly coat calamari pieces in the flour mixture, shaking off excess. Fry in batches for 45–75 seconds per side — just until edges curl and they are golden. Do not overcook (calamari becomes rubbery). Remove to a wire rack or paper towel-lined plate. Reserve pan fat for the aromatics step, leaving approx. 1 tbsp in the pan; discard rest or save for another use.

Sauté garlic, chiles, onion

In the same skillet over medium heat, add butter and 1 tablespoon olive oil. When butter foams, add sliced garlic and serrano chiles. Sauté for about 30–45 seconds until fragrant and garlic begins to color lightly. Add thinly sliced red onion and cook 1–2 minutes until softened but still slightly crisp. Add the fried calamari back to the pan and toss just to combine and warm through, about 30 seconds. Remove from heat to prevent overcooking.

Make gastrique

In a small saucepan over medium heat, combine red wine, red wine vinegar, sugar, and minced shallot. Bring to a gentle boil, then reduce to a simmer. Cook until mixture is reduced by about half and syrupy, 8–12 minutes. Taste and adjust: it should be balanced sweet, tangy, and slightly savory. Remove from heat and let cool for a minute; the gastrique will thicken as it cools.

Finish gastrique

If desired, whisk in a pinch of salt and a tiny pinch (1/8 tsp) cayenne to echo the dish's heat. Strain through a fine mesh sieve into a small bowl to remove shallot bits for a smooth glaze, pressing to extract syrup.

Make aioli

In a small bowl, combine mayonnaise, minced garlic, lemon juice, smoked paprika, cayenne, and salt. Stir thoroughly and taste; let sit 5–10 minutes to allow garlic to mellow and flavors to marry. Adjust seasoning with more lemon or salt as needed. Chill until ready to plate.

Plate and finish

Arrange fried calamari mixed with the sautéed aromatics on a warmed platter or individual plates. Drizzle the red wine gastrique lightly over the calamari (about 1–2 tablespoons total) for a glossy, tangy finish. Spoon small quenelles or dots of garlic aioli around the plate or serve aioli on the side. Sprinkle chopped cilantro and a light dusting of flaky salt over the top. Serve immediately with lemon wedges for squeezing.

Serve as an appetizer to share. Recommend 4–6 pieces per person depending on appetite. Provide extra gastrique and aioli for guests who want more sauce.
