Method

House-made Caesar Dressing

In a small bowl combine 1/2 cup mayonnaise, 1 tsp anchovy paste, 1 tbsp fresh lemon juice, 1/2 tsp Dijon mustard, 1/2 tsp Worcestershire, 1 minced garlic clove, 2 tbsp grated Parmesan and 1/4 tsp black pepper. Whisk until smooth and homogeneous. Taste and adjust lemon or salt if needed. Refrigerate until assembly.

Parmesan Crust & Butter

In a small bowl, mix 3 tbsp softened unsalted butter with 2 tbsp mayonnaise until spreadable and smooth.

Stir in 1/2 cup grated Parmesan, 1/2 tsp garlic powder and 1/4 tsp black pepper until evenly combined. The mixture should be spreadable but hold its shape.

Sandwich Assembly & Cooking

Preheat

Preheat a cast-iron skillet or griddle over medium heat (about 350-375°F / 175-190°C). Lightly oil the pan or use cooking spray.

Lay out 4 slices of sourdough. Spread the Parmesan butter mixture evenly on the outside face of each of these 4 slices (this will be the crust side).

Flip the four slices so the unbuttered side is facing up. On each slice, spread about 1 tablespoon of the prepared house Caesar dressing.

Top the dressing with 3 oz (approximately) smoked turkey breast per sandwich (divide 12 oz across 4 sandwiches), then arrange 2 slices of Swiss cheese over the turkey. Distribute about 2 tablespoons thinly sliced red onion and about 2 tablespoons cherry pepper relish on top of the cheese (you can place relish on the cheese or underside depending on preference).

Place the remaining 4 slices of sourdough on top, buttered side facing out. Press gently to compact.

Place sandwiches in the preheated skillet. Cook 3–4 minutes on the first side until the Parmesan crust is golden brown and crisp. Carefully flip and cook another 3–4 minutes until the second side is golden and the cheese is melted. If the bread browns too quickly before the cheese melts, reduce heat to medium-low and cover the pan with a lid for 1–2 minutes to encourage melting without burning.

Remove sandwiches from the pan and let rest 1 minute. Slice in half on the diagonal and serve immediately with extra Caesar dressing or remaining cherry pepper relish on the side if desired.
