Prepare glass
Chill an old-fashioned / rocks glass by placing it in the freezer for a few minutes or filling it with ice water while you build the cocktail.
Mix
In a mixing glass or cocktail shaker, combine 2 oz Irish single malt whiskey, 0.5 oz demerara or dark brown sugar syrup, 0.5 oz fresh lemon juice, 0.25 oz Green Chartreuse and 2 dashes Angostura bitters.
Add ice and stir
Add plenty of ice to the mixing glass. Stir briskly for 20–30 seconds (about 20–30 revolutions) until well chilled and slightly diluted, about 15–20% dilution.
Prepare serving glass
Dump the ice or ice water from the chilled rocks glass. Place a large ice cube (or fresh ice) in the glass.
Strain
Double-strain (or fine-strain if desired) the mixed cocktail over the large ice cube in the prepared rocks glass using a Hawthorne strainer and a julep or fine mesh strainer to remove small ice shards and any pulp.
Garnish
Express the oils of an orange twist over the drink by holding the twist peel skin-side down above the glass and giving it a firm squeeze. Run the twist around the rim and drop it into the drink.
Serve
Serve immediately. Sip slowly to appreciate the single malt's character balanced with herbal Chartreuse, citrus brightness, and gentle sweetness.
