Cook sausage

Heat a 10-inch nonstick skillet over medium heat. Add 1 tsp olive oil. Place sausage links or patties in the pan, leaving space between pieces. Cook for 4–5 minutes per side for links (or 3–4 minutes per side for patties), turning occasionally, until browned and cooked through (internal temperature 160°F / 71°C for pork). If links are large, reduce heat to medium-low after browning and cover for 2–3 minutes to finish. Remove sausage to a plate and let rest for 2 minutes, then slice or chop into bite-sized pieces. Leave any rendered fat in the pan for flavor, wiping out excess if there is more than 1 tbsp.

Whisk eggs

Crack 6 large eggs into a bowl. Add 1 tablespoon whole milk, 1 teaspoon salt, and 1 teaspoon black pepper. Whisk vigorously until the mixture is uniform and slightly frothy (about 30 seconds to 1 minute).

Melt butter

Return the skillet used for sausage to medium-low heat and add 1 tablespoon butter. Swirl until melted and the surface is evenly coated but not sizzling.

Cook scrambled eggs

Pour the whisked eggs into the pan. Let them sit undisturbed for about 10–15 seconds until the edges begin to set. Using a heatproof spatula, push the set edges toward the center, tilting the pan so uncooked eggs flow to the edges. Continue gentle folding and pushing every 10–15 seconds. When the eggs are about 70–80% set but still glossy and slightly runny, add the chopped/cooked sausage pieces evenly over the top.

Finish and season

If using cheese, sprinkle 1 cup shredded cheddar over the eggs and sausage now. Continue folding gently for another 20–30 seconds until eggs are just set but still moist and tender (carryover heat will finish them). Taste and adjust seasoning with a pinch of salt and a few grinds of black pepper if needed.

Serve & garnish

Transfer the scrambled eggs and sausage to a warm plate. Garnish with 2 tablespoons chopped fresh chives and, if desired, a drizzle of hot sauce (about 1 tsp) or additional black pepper. Serve immediately with toast, English muffins, or breakfast potatoes.
