Method

Waffle Batter

Prep dry ingredients

In a large mixing bowl, whisk together 2 cups all-purpose flour, 2 tablespoons granulated sugar, 1 tablespoon baking powder, and 1/2 teaspoon fine salt until evenly combined.

Combine wet ingredients

In a separate bowl or large measuring cup, beat 2 large eggs lightly. Add 1 1/2 cups whole milk, 1/2 cup melted unsalted butter (cooled slightly), and 1 teaspoon vanilla extract; whisk to combine.

Make batter

Pour the wet ingredients into the dry ingredients. Gently stir until just combined — lumps are okay. Let the batter rest 5–10 minutes at room temperature to hydrate the flour and produce a lighter waffle.

Heat waffle iron

Preheat your waffle iron according to manufacturer instructions to medium-high heat. Brush or spray lightly with neutral oil or melted butter so waffles don't stick.

Cook waffles

For each waffle, ladle the appropriate amount of batter into the preheated waffle iron (typically 1/2 to 3/4 cup for a standard Belgian waffle iron). Close and cook until golden brown and crisp, about 3–5 minutes depending on your iron. Transfer finished waffles to a cooling rack set over a baking sheet to keep them crisp while you cook remaining batter. Re-grease iron as needed.

Keep warm (optional)

If making waffles ahead for a bar, keep them warm and crisp in a single layer in a 200°F (95°C) oven on a wire rack until serving (no more than 30–40 minutes). For longer holding, cool completely and reheat in a 375°F (190°C) oven for 5–8 minutes or in a toaster oven.

Whipped Cream

Chill a mixing bowl and beaters in the refrigerator for 10–15 minutes for best volume. Pour 2 cups cold heavy cream into the chilled bowl. Add 2 tablespoons powdered sugar and 1/2 teaspoon vanilla extract. Whip with a hand mixer or stand mixer on medium-high speed until soft peaks form (about 2–3 minutes). Taste and add a little more powdered sugar if you prefer sweeter cream. Transfer to a piping bag or serving bowl and keep refrigerated until ready to serve.

Prepare fruit while waffles cook or ahead of time. Hull and slice strawberries, wash blueberries and raspberries/blackberries, and slice bananas just before serving to prevent browning. Arrange each fruit in separate bowls or small serving dishes for the waffle bar. If desired, toss berries with 1–2 tablespoons sugar or a spoonful of berry compote to macerate briefly (10–15 minutes).

Syrups & Sauces

Warm chocolate and caramel sauces gently in a microwave in 20–30 second bursts, stirring between bursts until pourable. Keep maple syrup at room temperature or warm slightly. Place each syrup/sauce in small pitchers or squeeze bottles for easy self-service at the waffle bar.

Toast nuts and coconut if desired: in a dry skillet over medium heat, toast 1/2 cup chopped walnuts or pecans for 3–5 minutes until fragrant, stirring frequently; toast 1/4 cup coconut flakes for 1–2 minutes until golden. Let cool and transfer to serving bowls along with mini chocolate chips and sprinkles.

Assembly & Serving

Arrange the waffle station: place warm waffles on a platter or chafing station, set out whipped cream, fruit bowls, syrups, sauces, nuts, coconut, chocolate chips, sprinkles, butter, and powdered sugar. Provide plates and small serving utensils or tongs for each topping.

To build a waffle: place a warm waffle on a plate. Add a pat of butter if desired. Drizzle with maple syrup, chocolate, or caramel. Spoon on fresh fruit or compote. Add a generous dollop or piped swirl of whipped cream. Sprinkle with nuts, coconut, chocolate chips, and/or sprinkles. Dust with powdered sugar to finish.

Tips for service: keep delicate toppings (whipped cream, warm sauces) near the front for quick access. Replace toppings as needed and refresh fruit periodically. For a faster service line, pre-slice waffles and stack them in small stacks of 2–3 for guests to finish with toppings.
