Prep

Preheat oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line with parchment, leaving an overhang for easy removal.

Dry ingredients

In a medium bowl, whisk together 2 cups all-purpose flour, 1/2 cup granulated sugar, 2 tsp baking powder, 1/2 tsp fine sea salt, and 1 tsp ground cardamom until evenly combined.

Wet ingredients

In a large bowl, whisk 3 large eggs until combined. Add 1 cup whole milk, 1/2 cup Greek yogurt, 1 tsp vanilla extract, 2 tbsp lemon zest, and 1 tbsp orange zest. Whisk to combine.

Combine

Make a well in the dry ingredients and pour in the wet mixture. Stir gently with a rubber spatula until just combined — small lumps are fine. Fold in 1/2 cup melted butter until incorporated, taking care not to overmix (overmixing will make the loaf dense).

Bake

Pour batter into the prepared loaf pan, smoothing the top. Bake in the center of the preheated oven for 45–55 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs and the top is golden brown. If the top browns too quickly, loosely tent with foil after 30 minutes.

Cool

Remove the loaf from the oven and let it cool in the pan on a wire rack for 15 minutes. Use the parchment overhang to lift the loaf out and transfer to the rack to cool another 20–30 minutes before glazing.

Brown the butter

While the loaf bakes or during the final 15 minutes of cooling, melt 1/4 cup unsalted butter in a small stainless-steel skillet over medium heat. Swirl occasionally; the butter will foam, then the milk solids will begin to brown and smell nutty. This takes 4–6 minutes. Watch closely to avoid burning.

Infuse with sage

When the butter is a light amber and smelling toasted, remove from heat and immediately add 8 fresh sage leaves. They will sizzle and crisp; let them steep for 1 minute to infuse flavor, then remove the leaves and reserve them on a paper towel if you want a crisp garnish.

Finish drizzle

Return the skillet to very low heat, add 2 tbsp light brown sugar and 1 tbsp fresh lemon juice to the browned butter, stirring until sugar dissolves and the mixture is glossy. Remove from heat and stir in a pinch of flaky sea salt. Let cool for 1–2 minutes so the drizzle thickens slightly but remains pourable.

Apply

Once the loaf is mostly cooled (still slightly warm is fine), drizzle the brown butter sage sauce evenly over the top, letting it soak into the crumb and run down the sides.

Finish & Serving

Dust and garnish

Sift 2 tbsp powdered sugar over the glazed loaf for a light dusting. Scatter the reserved crisped sage leaves and 1/4 cup toasted sliced almonds over the top if using.

Slice and serve

Slice the loaf into 10–12 slices. Serve warm or at room temperature, garnished with microgreens or mint leaves if desired. Leftovers keep tightly wrapped at room temperature for 2 days or refrigerated for up to 5 days.
