Signature Dexter Sauce

Make the sauce first so flavors meld: In a medium bowl whisk together 1/2 cup mayonnaise, 2 tablespoons ketchup, 1 teaspoon Dijon mustard, 1 teaspoon Worcestershire sauce, 1/2 teaspoon smoked paprika, 1 teaspoon pickle juice, 1/4 teaspoon hot sauce (optional), 1/4 teaspoon salt and 1/8 teaspoon black pepper until smooth. Adjust to taste. Chill while preparing the rest (can be refrigerated up to 3 days).

Burger Patties

Divide 1 lb ground beef into four equal portions (about 4 oz each) if making 4 small burgers; for two larger double patties adjust portion size. Lightly form into loose patties about 3/4 inch thick, making a shallow dimple in the center of each patty with your thumb to promote even cooking.

Season both sides of each patty with 1 tsp kosher salt and 1/2 tsp freshly ground black pepper and drizzle or brush each with 1 tablespoon Worcestershire sauce total (or 1 tsp per patty). Do not overwork the meat when forming.

Heat a large skillet or griddle over medium-high heat. Add 1 tablespoon unsalted butter and swirl to coat. When butter is shimmering, place patties on the hot surface, leaving space between them.

Cook for about 3-4 minutes on the first side without moving to develop a crust. Flip and cook another 2-3 minutes for medium (adjust time for desired doneness). During the last minute of cooking, place one slice of American cheese on each patty and cover pan briefly to melt.

Remove patties and let rest 2 minutes while assembling buns.

Buns & Assembly

Split 4 burger buns and spread the cut sides with the remaining 1 tablespoon butter. Place buns, cut-side down, on the skillet or griddle over medium heat until golden and lightly toasted, about 1-2 minutes.

To assemble each burger: spread about 1 to 1 1/2 tablespoons of Signature Dexter Sauce on the bottom bun. Place the cheese-topped patty on the sauce. Top with a large handful (about 1/2 cup) shredded lettuce, a few thin slices of Spanish onion (about 2-3 rings), and 2 pickle slices if using. Drizzle another 1/2 tablespoon of sauce on the top bun or spread evenly, then set top bun in place.

Serve immediately while hot with fries or your preferred side.
