Preparation

1

Warm the glass

Preheat the heatproof glass by filling it with hot water. Let sit 30–60 seconds, then pour out the water and dry briefly so the glass remains warm. A warm glass helps keep the drink at the right temperature.

2

Brew coffee

Brew a strong, hot coffee (about 6 fl oz per serving). Use a dark roast or espresso-strength brew for best flavor. Keep the coffee hot until assembly.

Assembly

3

Add sugar and whiskey

Place the warmed glass on a heatproof surface. Add 1 teaspoon packed brown sugar to the bottom of the glass, then pour in 1.5 fl oz Irish whiskey.

4

Add coffee and dissolve sugar

Pour 6 fl oz of the hot brewed coffee into the glass over the whiskey and sugar. Stir thoroughly with a spoon until the sugar is completely dissolved (about 10–15 seconds).

5

Whip the cream

Lightly whip 1 oz heavy cream until it is just thickened but still pourable (soft peaks are not needed). The cream should be fluid enough to float but thick enough to form a layer.

6

Float the cream

Hold a spoon upside down just above the coffee surface and slowly pour the lightly whipped cream over the back of the spoon so it gently floats on top of the coffee, forming a distinct cream layer.

7

Garnish and serve

Optionally place 2–3 whole coffee beans on the cream as garnish. Serve the Irish coffee hot; do not stir. Drink the coffee through the cream layer.
