Melt chocolate

Place the chopped chocolate and butter in a heatproof bowl. Set over a pan of simmering water (double boiler) ensuring the bowl doesn't touch the water. Stir gently until melted and smooth, then remove from heat and set aside to cool slightly (about 3–5 minutes).

Add espresso and Bailey's

Stir the hot espresso, 1 tablespoon granulated sugar, and 1 tablespoon Bailey's into the slightly cooled melted chocolate until fully incorporated and glossy. The mixture will thin; allow it to come closer to room temperature but remain pourable (about 5–8 minutes).

Temper and combine yolks

Whisk the 4 egg yolks briefly in a medium bowl until smooth. Slowly add about 2 tablespoons of the warm chocolate-espresso mixture to the yolks in a thin stream while whisking constantly to temper (prevents cooking). Once combined, pour the tempered yolk mixture back into the main chocolate bowl and whisk until homogeneous.

Make meringue from whites

In a clean mixing bowl, beat the 2 egg whites at medium speed until foamy. Gradually add 2 tablespoons granulated sugar and continue beating to firm glossy soft peaks (not dry).

Fold whites into chocolate

Take one-third of the meringue and briskly fold it into the chocolate mixture to lighten it (use a spatula and cut-and-fold motion). Gently fold in the remaining meringue in two additions until no white streaks remain, taking care not to deflate too much.

Whipped cream & finishing

Whip cream

In a chilled bowl, pour the cold heavy cream, add 1 teaspoon confectioners' sugar and 1 teaspoon vanilla extract. Whip to soft peaks (holds shape but still slightly droopy). Do not overbeat.

Fold cream into mousse

Fold one-third of the whipped cream into the chocolate mixture to lighten it, then gently fold in the remainder until uniform and airy. Work gently to preserve volume.

Portion and chill

Divide the mousse into 6 serving glasses or ramekins (use about 4–5 oz / ~120–150 g per serving). Smooth the tops, cover with plastic wrap, and refrigerate at least 2 hours, preferably 3–4 hours, until set.

Garnish and serve

Shortly before serving, dust each mousse lightly with unsweetened cocoa powder, top with a dollop of whipped cream if desired (reserve a little whipped cream for garnish), and sprinkle chocolate shavings. Optionally add a light drizzle (½ tsp) of Bailey's on top for extra flavor. Serve chilled.
