Method
Preparation of proteins and sides
Cook the fried egg
Heat 1 tsp oil or butter in a nonstick skillet over medium heat. Crack 1 egg into the skillet and cook until whites are set but yolk remains runny (about 2–3 minutes) for sunny-side up, or flip and cook an additional 30–60 seconds for over-easy. Season with a pinch of salt and pepper. Keep warm.
Heat or prepare side
Prepare your chosen side: heat prepared hashbrowns or diced potatoes in a skillet until crisp (3–5 minutes), reheat french fries in oven or fryer until hot and crisp, or portion fresh fruit into a small bowl. Keep side warm or ready to serve.
Assembling the quesadilla
Lay a large flour tortilla flat on a clean surface. Sprinkle half of the pepper jack and half of the cheddar evenly over one half of the tortilla — this helps the cheese act as glue when melted.
Add 1 cup of your warmed protein evenly over the cheese layer. If using sliced skirt steak or shredded meat, spread it in an even layer so each bite has protein.
Scatter the remaining pepper jack and cheddar over the protein, then sprinkle chopped cilantro and thinly sliced pepper (if using) on top of the cheese.
Fold the empty half of the tortilla over the filled half to create a semicircle. Press lightly to compact the filling.
Cooking the quesadilla
Heat a large skillet or griddle over medium-low to medium heat. Add 1 tablespoon butter or a light coating of oil and swirl to coat.
Flip the quesadilla and cook another 2–3 minutes until the second side is golden and the cheese is fully melted. Reduce heat slightly if the tortilla browns too quickly before the cheese melts.
Remove from skillet and let rest 1 minute. This helps the melted cheese set slightly so slices hold together.
Finishing & plating
Slice the quesadilla into 3–4 wedges using a sharp knife or pizza cutter. Place on a plate alongside your chosen side (hashbrowns, fruit, diced potatoes, or french fries).
Top the quesadilla with dollops of sour cream (about 2 tbs), and arrange sliced or diced avocado on top or to the side. Garnish with extra cilantro and a squeeze of lime wedge.
Serve immediately with optional hot sauce or salsa on the side.
